Ingredients
- 1.5 kg of fish (choose fish not fat and delicate in flavor: hake, sea bream, sole, etc)
- Extra–virgin olive oil
- 1 tablespoon of desalted capers
- 2 cloves of garlic
- 5 peeled tomatoes
- 1 teaspoon of chopped parsley
- salt
- pepper
- chilli pepper
- 500gr of pasta
- Clean the fish in running water.
- In a large saucepan, pour a glass of oil and saute 2 cloves of garlic finely chopped.
- Add capers.
- Add 5 diced tomatoes.
- After a few minutes add the fish and chopped parsley.
- Fill the pan with water to cover the fish and cook for 45 minutes (cooking time depends on the type of fish used).
- Sprinkle with salt, pepper and crushed chilli red pepper.
- When the fish is cooked, remove from the pan and let it warm. Filter the broth using a strainer.
- Put the broth filtered again on the heat and cook pasta choosing short cuts/shapes (“Broken Spaghetti” can also be used – See picture).
