Winter Salad by Claudio Bincoletto

Instructions

  1. Prepare salad in a large bowl. Add the fennel, oranges, seeds of quinoa, the anchovies.
  2. Gently stir and season with extra virgin olive oil and salt of Cervia.
  3. Add the leaves of parsley and chervil for garnish.

          Simple and colorful winter salad, full of flavor and well-being.

Ingredients

  • 2 bulbs of fennel finely chopped (or wedges)
  • 2 Tarocco oranges
  • Cervia salt
  • 2 g  of toasted quinoa seeds
  • extravirgin olive oil
  • 5 g of wine vinegar
  • 2 anchovies (optional)
  • leaves of parsley and chervil for garnish
