Clean carrots and potatoes
Cut in small pieces
Prepare a chopped onion and let it fry
Add the carrots, the chopped potatoes and cook, adding the vegetable stock from time to time
Cook on medium-low heat for about 40 minutes
When cooked, mix with a mixer
Options are endless … instead of potatoes you can combine zucchini or mushrooms … or various vegetables. Croutons are a must!
