Risotto with Radicchio

Instructions

  1. Clean the radicchio and break it 
  2. Pour the extra-virgin olive oil in a saucepan and brown for a few minutes the peeled onion.
  3. Add the radicchio washed and chopped. Stir and allow to wither for a few minutes over low heat
  4. Add the rice.
  5. Pour the white wine and allow to evaporate.
  6. Bring the vegetable broth to a boil and pour in the rice, gradually. Cook.
  7. Halfway through cooking, check the flavor.
  8. Season with salt
  9. Turn off the heat. Add the Parmesan cheese
  10. Let stand for a few minutes
  11. Serve

  • 400 gr vialone nano or carnaroli rise
  • 300 gr di radicchio
  • 1 peeled onion
  • 3  tbsp of extra-virgin-olive-oil
  • 3  tbsp of Parmigiano Reggiano
  • 1  glass of white wine
  • 1 lt vegetable broth
  • Salt
