- Clean the radicchio and break it
- Pour the extra-virgin olive oil in a saucepan and brown for a few minutes the peeled onion.
- Add the radicchio washed and chopped. Stir and allow to wither for a few minutes over low heat
- Add the rice.
- Pour the white wine and allow to evaporate.

- Turn off the heat. Add the Parmesan cheese
