Instructions

  1. Prepare the meat
  2. Flavor the meat in a mixture of salt, peeled and finely chopped garlic, sweet red pepper powder and hot pepper flakes. Coat each individual piece of meat in a uniform manner
  3. Place the meat in a pan to size, greased with extra virgin olive oil
  4. Cover the meat with two or three sheets of wet paper straw (be careful – wet out the paper with water very well to keep it from burning in the oven!) or use baking paper and above it aluminum foil for food
  5. Bake at 180 ° C for two hours
  6. 15 minutes before cooking, remove the pan from the oven and drizzle the meat with white vinegar
  7. Put again in the oven until cooked
  8. Serve the meat hot or warm
