Fish Broth

Instructions

  1. Clean the fish in running water.
  2. In a large saucepan, pour a glass of oil and saute 2 cloves of garlic finely chopped.
  3. Add capers.
  4. Add 5 diced tomatoes.
  5. After a few minutes add the fish and chopped parsley.
  6. Fill the pan with water to cover the fish and cook for 45 minutes (cooking time depends on the type of fish used).
  7. Sprinkle with salt, pepper and crushed chilli red pepper.
  8. When the fish is cooked, remove from the pan and let it warm. Filter the broth using a strainer.
  9. Put the broth filtered again on the heat and cook pasta choosing short cuts/shapes (“Broken Spaghetti” can also be used – See picture).

  • 1.5 kg of fish (choose fish not fat and delicate in flavor: hake, sea bream, sole, etc)
  • Extravirgin olive oil
  • 1 tablespoon of desalted capers 
  • 2 cloves of garlic
  • 5 peeled tomatoes
  • 1 teaspoon of chopped parsley
  • salt
  • pepper
  • chilli pepper
  • 500gr of pasta
