If you come to visit Molise you just can't help but taste the treccia, a fresh, handmade, stretched curd cheese with a candid color and shiny shape that is knotted just like a hair braid, it takes three rolls of filo dough. What an experience! In Santa Croce, in Molise, there are some ladies who work it, using an ancient and precious loom.

The freshly worked braid is amazing, and only on certain days and places is possible to have an out-of-the-ordinary sensory experience.
