- Wash and boil octopus
- Cut tentacles and heads into small pieces
- Put them in a salad bowl with extra-virgin olive oil, lemon juice, parsley, salt and pepper
- Leave them to marinate for 15 minutes
- Mix well and serve
The Octopus is a mollusc very popular in Italian cooking for its lean meat and because it is extremely versatile. Ideal for the Mediterranean diet because low in fat, rich in protein and minerals, and with a low cholesterol content.
Cleaning the Octopus is not simple. It is important to “beat the Octopus” with a meat mallet for at least 5 minutes to get a tender flesh.
