- Wash 4 large courgettes, remove the ends, cook in boiling water for 15 minutes, drain and dry.
- Cut them in half and empty them of some pulp.
- In a bowl, work 250 gr of fresh ricotta. flavoring it with extra virgin olive oil, salt, pepper, garlic, basil, chopped parsley and mint.
- Fill the courgettes with this mixture and serve them cold.
