COURGETTES with RICOTTA

Instructions

  1. Wash 4 large courgettes, remove the ends, cook in boiling water for 15 minutes, drain and dry.
  2. Cut them in half and empty them of some pulp.
  3. In a bowl, work 250 gr of fresh ricotta. flavoring it with extra virgin olive oil, salt, pepper, garlic, basil, chopped parsley and mint.
  4. Fill the courgettes with this mixture and serve them cold.
