Nidi o Cartellate…is Christmas!

Instructions

Sift the flour and form a fountain

Add the eggs and other ingredients

Knead everything until a homogeneous mixture is obtained

With the pasta machine, prepare the pastry

With a scalloped wheel cut strips 3 cm wide and 16 cm long (depending on the size you want)

Roll up the dough,  joining some points until you get small rosettes .. or cartellate … or nests!

Fry the cartellate in a pot containing extra virgin olive oil, remove from heat and leave to drain on absorbent paper

Put the cartellate on a plate

Soften honey – a bain-marie – and with a spoon let it fall flush onto the cartellate ….

Cartellate announce Christmas. They look like roses or nests!

Every family has its own recipe.

At “Delizie del Grano” they love to make them  this way:

Extra virgin olive oil

lemon zest

2 eggs

400gr flour

50gr butter

60gr sugar

1 pinch of salt

75gr of white wine with 1 tablespoon of citrate
