Detox: Quinoa, Avocado and Goat Cheese Salad

Instructions

Cook the quinoa following the instructions on the package.

Clean the onion and avocado, cut into small pieces (cut the onion into very small pieces)

Wash the tomatoes and cut into small pieces.

Wash raw spinach

In a bowl combine all the ingredients: quinoa, cherry tomatoes, avocado, onion, spinach

Crumble the cheese over the salad

Season with extra virgin olive oil, lemon juice, and salt.

Mix

Decorate with mint or basil leaves

250 gr quinoa

10 cherry tomatoes

200 gr goat cheese

1 ripe avocado 

½ red onion

½ lemon juice

a tuft of raw spinach 

extra virgin olive oil to taste

salt to taste
